Salad: Mung Bean Sprout

YIELD 2 servings main course, 4 servings side dish

INGREDIENTS

8 ounces mung bean sprouts

SAUCE (whisked together):
1 scallion, finely chopped
2 tsp garlic, minced
2 tsp sesame oil
1 tsp soy sauce
1 tsp sesame seeds, toasted
1/2 tsp salt

PREPARATION

1. Rinse mung bean sprouts thoroughly. Parboil for 2 minutes; rinse in cold water and let dry.

2. Toss with SAUCE.

NOTE: Eat soon; will not keep for very long even in fridge.
